Secret Ingredient Sweet Potato Fries with Spicy Avocado Whip

I have a few food vices, and one of them is fries. Hot, salty fries that almost burn your mouth. I can never get enough.

In the interest of always improving and aiming to be healthier {etc etc} I’ve been trying to make and eat fries at home more often. That way, I can control how much salt goes onto them, and the kind of oils used in the cooking process, and I can also control the type of potato used.

White potatoes are so fun, and if there was no such thing as calories I would happily eat them for every meal, but we all know by now that sweet potatoes are the better option. They’re high in vitamin a and vitamin c, as well as magnesium, niacin and potassium. They’re also sweeter and more flavourful than their white counterpart, and contain way more fiber, which means you’re going to be fuller for longer.

I recently learnt a new way of cooking my sweet potato fries, and this little trick makes them taste like they’re straight out of the deep fryer. The best bit? They’re actually oven baked with minimal oil. Incredible – right? Keep reading to see how I make my crispy sweet potato oven fries.

for the fries:

2 large sweet potatoes, washed and sliced into finger sized fries

3 tbsp olive or coconut oil

1/2 cup plain flour or cornstarch

1 tsp each of parsley, oregano and rosemary

pinch of sea salt and black pepper

 

for the whip:

1 large ripe avocado, stone removed and peeled

juice of half a lemon

pinch of sea salt and black pepper

pinch of cayenne pepper

 

how:

Prepare a baking tray by brushing it with the oil and preheat your oven to 180°C.

Grab a flat bowl and put the flour, herbs, salt and pepper in it. Mix well. Now get your readily sliced sweet potato and roll it in the flour mixture, gently tapping off the excess before placing on the baking tray, leaving a 2cm gap between each fry. Continue until you’ve coated all pieces of sweet potato with the herby flour mixture.

Place the tray in the oven and bake for 20-25 minutes until tender and crispy, turning once half way through.

While the fries are cooking, prepare the avocado whip by placing all ingredients into a food processor and blitzing until smooth.

Once the fries are done, remove from the oven. Serve them in a bowl with the avocado whip in the middle and an extra sprinkle of sea salt.

    I bookmarked this post! I can’t wait to try this, I love oven baked fries but I’ve never through to try breading them so they stay crunchy, or to add cayenne to my avocado!
