Sweet & Spicy Grapefruit, Avocado & Poppyseed Salad
For someone who normally hates the time and effort involved in preparing a healthy lunch, I’ve been on a bit of a salad kick lately.
And not just any salad. Oh no.
It’s been mainly *plant based salads.
*I use the term plant based a little loosely as sometimes these salads involve a tiny crumble of feta cheese, but that’s it.
Now this is not the norm for me in any way at all. I used to struggle to eat a meal if it didn’t have meat in it. I couldn’t fathom a chicken-less salad, pasta or casserole, but lately I’ve been doing really well without animal protein in my meals.
I’m not sure exactly when it happened, but I’ve been leaning towards eating sort of plant based more and more over the last month. I think Niomi Smart inspired me – with her endless delicious and healthy recipes she shares on her Youtube channel. Her skin glows, the energy she sustains throughout the day is incredible, and overall I just find her positive attitude and approach to food really, really inspiring.
I will say now that I’m not transitioning to a 100% plant based diet by any means. I’m just really enjoying fueling my body with more plants and legumes, as opposed to relying on meat, poultry and dairy to get through the day.
I created this salad out of a pure need to switch things up. I had a grapefruit in the fridge, a fruit bowl full of avocados, and a tiny wedge of feta that were begging to be eaten. I also had a bit of chilli jam leftover and you guys know I cannot resist that stuff. Here’s how I made my sorta sweet, sorta spicy grapefruit, avocado and poppyseed salad.

SWEET & SPICY GRAPEFRUIT, AVOCADO & POPPYSEED SALAD
1/2 ruby red grapefruit – sliced, peeled and cut into bite size peices
1 super creamy avocado – sliced
2-3 cups baby spinach – depending on your appetite
2 teaspoons black poppy seeds
1 tablespoon feta – crumbled
2 teaspoons chilli jam
1/4 cup whole, shelled pistachios
Simply toss all ingredients in a large bowl and then serve immediately.
Did I mention this salad is stupidly easy? No? Oh, well I have now.
Seriously – how easy is that to make? The other major plus is that it won’t break the bank by any means and you’re getting a nice range of vitamins, minerals and nutrients.
